Chicken Avocado Soup

Sounds a bit weird but this is delicious. If you can catch avocados on sale this makes an economical dinner. It's complete in under 30 minutes and surprisingly filling.
Avocados contain monounsaturated fat that is beneficial to blood cholesterol. Just don't over do it. Half a medium avocado is 160 calories.

Chicken Avocado Soup

1 Tbsp Extra Virgin Olive Oil
1 lb Chicken Breasts (I use about 5 breast tenders) - diced
1 Onion finely chopped
2 Tomatoes (or in a pinch 1 can of diced)
1 Lime, washed and cut in half
4 c Chicken Broth
Dash or two of Hot Sauce
2 Tbsp Fresh Cilantro or to taste (optional)
Garnishes
2 Medium Avocado - diced
4 oz Cheedar Cheese - shreded
Tortilla Chips

In a large pot over medium high heat add Olive Oil and diced chicken breasts. Let cook until no longer pink, add onion let cook 2-3 minutes longers. Add Chicken broth, tomatoes, hot sauce and lime. Bring to a boil and then reduce heat to a simmer for about 15 minutes. Remove lime with tongs squeezing it into the soup before discarding. Top with Cilantro and serve garniches on the side.
We place avocado, cheese, and crushed chips into our own bowls according to taste.

Calories per serving (w/ 1/2 med avocado, 1 oz cheese, and 1 serving chips): 520 adjustable by using less or more garnishes

Cost per serving: $4.00 tops. This is a rough estimate for now because I am cooking off of what I have on hand the only item I had to buy was the avocados and those were $0.89 each. So my total cost was merely: $1.78.
